I want my villa in Florida and want to save and buy outright so declaring every penny is the only way.

I agree and do the same. Every penny is declared!

There's weeks where I make over a grand doing Mon-Fri but weeks where I don't even make ?400, the key is to save so a shit week or month doesnt fuck you up the arse

It's doable in the ideal conditions, but comparatively few people will be in the ideal conditions - location, availability and so on make a huge difference and I certainly don't earn a grand a week every single week. I've had weeks where I've only done or been able to do one or two bookings and others where I've done ?1K in a day - that's what self-employment is like :).

Nobody can say what somebody else can or will earn, and the only way to find out for sure is by doing it. Once you've a rough idea of what your 'steady' or average weeks come out at you can start trying different things if you're not happy with it; switch prices around, cut unnecessary costs, putting up extra advertising and suchlike.

ah fair point, theres all sorts of factors to consider really. I remember how bad it was when the last bloody recession hit  :-[
